Homemade pizza night happens frequently in the McDonald house and by making a gluten-free base I could enjoy a delicious pizza that didn’t upset my body! This Mediterranean pizza was amazing!






- With an amazing dough using a recipe by “Gluten-free on a shoestring” I had the perfect base.
- I chose to add pesto as my base sauce. I used tomato sauce for another pizza and it was also delicious.
- I sprinkled some mozzarella and feta cheese.
- Then added some chicken.
- Lastly, some sun-dried tomatoes.
- Cook at 425 for 10-15 minutes.

I love leftover pizza so I made many of these and packed them for lunches for the following days. I also had extra cooked flatbread that I used throughout the week for pizzas and other meals. This meal was not only great because it was gluten-free, it also saved me from buying lunch on campus and was delicious! You can get so creative with these, I will certainly be making these again!
