I realized although I have been avoiding gluten, I am unaware of the science behind it all and I was curious to learn more. So, this inquiry post, I wanted to explore what gluten sensitivity actually is and how it works.

Here are some things I learned:

  • Gluten is a protein in wheat and a few other grains
  • It is made up by two parts called Gliadin and Glutenin
  • FODMAPS ( Fermentable Oligosaccharides, Disaccharides, Monosaccharides, and Polyols)
  • FODMAPS are a group of short-chain carbohydrates that are poorly absorbed in the small intestine, and when they reach the large intestine, they ferment, potentially causing digestive issues like bloating, gas, and abdominal pain in some individuals
  • Many people who think they are having a reaction to gluten, may actually be having a reaction to these FODMAPS.
  • I may be having a reaction to something other than the gluten!
