Free Inquiry 10- My reflections on my journey of this portfolio

I have learned so many great GF recipes and quick snacks to add to my meal rotation. My favorite out of all the things I tried was the overnight oats and the egg bites. Both of these breakfast foods were so tasty and quick to make. I love how you can grab the overnight oats in the morning and pop the in a bag if needed since they are already in a container. The nutella recipe had the perfect amount of flavour without being too sweeet and the egg bites were so tasty could be made so versatile.

Free inquiry 9- Rice cake snacks

One of my friends frequently uses rice cakes for the base of her snacks. For example instead of making avocado toast she puts avocado over a rice cake. Although this sounds less appealing to me I thought I would give it a try. Here are two variations that sound interesting from the Quaker website.

My review of the yogurt rice cake:

I give it a 7/10. It was tasty but the yogurt and rice cake together didn’t have much flavour so I wish there was something like honey or peanut butter to give it a little something. I think peanut butter and banana would be really good and I think I’ll try that one next!

Free Inquiry 8- Making overnight oats

To document the making process, I decided to make a short youtube video. For the video I used I movie again and used the “magic movie” effect and then went in to edit to my desire.

Overall, I am very happy with how these turned out. They were super simple to make and they tasted delicious!

For my next meal prep project, I will be making another breakfast food, overnight oats! The only thing is there are so many variations and recipes that I feel overwhelmed. To help with this, I decided to dedicate a inquiry post to my planning process. In this post I will show recipes I’m interested in and create a list of all the ingredients I need and then make a grocery list!

Free Inquiry 6- Korean Beef Bowls

This is a recipe card I created using “Goodnotes”

To document the making of this recipe, I used IMovie on my Ipad to create this short one minute snapshot of the meal prep bowl. This recipe is tasty, quick, gluten free, high in protein, and it is so easy to personalize! Next time I think ill add more veggies.

Although the meal was quick, the creation of the video and recipe card took me a long time. I used an imovie storyboard template called “editorial” for this video. The templates are cool because they give you ideas for what each clip should be of and what music, transitions, and speed of clips you should use. I messed around with the formatting of it, added text to my slides and used the “voiceover” feature for the last clips. I also thought I would note that I discovered that imovie can make the movie for you using the project feature called “Magic movie”. This would be a super easy way to start a project if you didn’t know where to start or were in a rush.

Free Inquiry 5- What’s the big deal with gluten?

I realized although I have been avoiding gluten, I am unaware of the science behind it all and I was curious to learn more. So, this inquiry post, I wanted to explore what gluten sensitivity actually is and how it works.

Here are some things I learned:

  • Gluten is a protein in wheat and a few other grains
  • It is made up by two parts called Gliadin and Glutenin
  • FODMAPS ( Fermentable Oligosaccharides, Disaccharides, Monosaccharides, and Polyols)
  • FODMAPS are a group of short-chain carbohydrates that are poorly absorbed in the small intestine, and when they reach the large intestine, they ferment, potentially causing digestive issues like bloating, gas, and abdominal pain in some individuals
  • Many people who think they are having a reaction to gluten, may actually be having a reaction to these FODMAPS.
  • I may be having a reaction to something other than the gluten!

Free Inquiry 4- Home-made egg bites

Today I decided to make another short imovie video documenting the making of my homemade egg bite. This is a trick my mom taught me recently. You add an egg to a petri dish or glass container (I didn’t add milk to mine but you can!), and add in any toppings you’d like such as cheese, ham, spinach, broccoli. You then cook for one minute, flip, and microwave for another 20-30 seconds.

I hadn’t experimented with imovie since I was a kid but I found it fun and fairly simple to navigate. For this project I just used the basic movie template where you add clips in and do everything from scratch. I experimented with text and all the different elements of it (how long it stays, what it looks like, how it transitions etc…). I also added sound effects to my work which was fun! These cheering, ticking, and other sounds added a fun little touch to my project! Although this could be better and I am in no way a master, I was able to learn and experiment to improve my editing skills and create a piece I liked. Now that i’ve gotten comfortable with it again, I will definitely will be using imovie more for editing clips and making vidoes.

Free Inquiry 3- GF pizza making

Homemade pizza night happens frequently in the McDonald house and by making a gluten-free base I could enjoy a delicious pizza that didn’t upset my body! This Mediterranean pizza was amazing!

  1. With an amazing dough using a recipe by “Gluten-free on a shoestring” I had the perfect base.
  2. I chose to add pesto as my base sauce. I used tomato sauce for another pizza and it was also delicious.
  3. I sprinkled some mozzarella and feta cheese.
  4. Then added some chicken.
  5. Lastly, some sun-dried tomatoes.
  6. Cook at 425 for 10-15 minutes.

I love leftover pizza so I made many of these and packed them for lunches for the following days. I also had extra cooked flatbread that I used throughout the week for pizzas and other meals. This meal was not only great because it was gluten-free, it also saved me from buying lunch on campus and was delicious! You can get so creative with these, I will certainly be making these again!

Free Inquiry 2- Getting Organized

To get started, I went to Pintrest and searched “gluten free” and “meal prep” for some inspiration.

Below are some gluten free food ideas that caught my eye and some information about them:

Overnight Oats:

Overnight oats are basically oatmeal and chia seeds that have been soaking in liquid (usually a type of milk) overnight. It can be customized with various toppings like fruit, nuts, seeds, and yogurt, requiring no cooking before eating! A great breakfast for rushed mornings!

Korean Beef Bowl

This bowl is quick to make and will last for a few days in the fridge for meal prep. There are lots of veggies you could add on top, such as steamed broccoli, shredded carrot etc…

GF Flatbread Pizza

I love homemade pizza and the leftovers the next few days, but the dough has gluten in it. By making my own gluten free flatbread, I would still be able to use the same toppings and make my own pizza!

Intro to my free Inquiry: Gluten-free eating

Over the past months, I’ve been monitoring my gluten intake, as it seemed to be having negative effects on my body. After limiting my intake, I found that my stomach issues occurred less frequently (always coinciding with times I ate gluten) and my skin became less bumpy and irritated. Although I haven’t been officially tested, it became evident that my body reacts poorly to gluten. Despite this awareness, I found myself ordering Starbucks sandwiches when I didn’t have lunch or eating a piece of toast on a rushed morning, showing how a busy schedule impacted my eating habits. When I learned about this free inquiry project, I saw it as the perfect opportunity to focus on meal prepping and improving my gluten-free diet.
